Fragrance: fresh, intensely grassy with predominant aroma of artichoke, cardoon and green almond, enhanced by floral and cherry hints which create an extremely complex bouquet.
Taste: ample, with strong and decisive spice and bitterness, overlaid with excellent harmony, great complexity of herbaceous hints and long persistence of smooth aromatic notes.
Use: Excellent on potatoes, beans, chickpeas and vegetables in general; on red meat or strong-flavoured fish; with fresh cheese, such as ravaggiolo and mozzarella, which enhance the fresh-green features of the oil. It perfectly pairs zucchini pies or artichoke cakes; ideal on grilled porcini mushrooms and first courses such as gnocchi or ricotta cheese tortelli with parmesan flakes.

Taste: medium taste, sweet base and lightly pungent-bitterish with a hint of grass and artichoke, and ripe fruit
Use: on soups, vegetables, legumes, bruschetta, pinzimonio, salads, fish, roast meats, etc. Excellent for sauces, for browning vegetables and for all fried foods

A great expression of the strong and authentic Rotondella, the queen in the Cilento Valley.

Fragrance: strong and enveloping with hints of mint and rosemary to which are embraced clear tones of unripe almond, cinnamon and black pepper
Taste: wide and elegant in tasting, releases notes of artichoke, thistle and chicory, strong bitter and spicy
Use: perfect on bruschettas, swordfish carpaccio, tuna marinades, artichoke salads, bean soups, red meats, grilled game and aged chees.

EVO

A light and sweet dance of Frantoio, Rotondella and Leccino.
